Sushi Saito, housed in the Four Seasons Hotel. The omakase experience at Sushi Saito revolves around authentic, Edomae-style sushi. Essentially, how sushi was prepared hundreds of years ago in the Edo era. Supervised and managed by Chef Takashi Saito, the team crafts Edomae-style sushi using the best seasonal seafood. Rice from Akita and Nagano is cooked in spring water from Kagoshima and dressed in a special vinegar blend.
