Alain Passard
The Verdict
L’Arpège. Alain Passard is one of a handful of cooks who have remained at the top of global fine dining for decades. He was a master rotisserie and then one day decided to forgo fish and meat and focus on vegetables. These vegetables, grown on a farm north of Paris are delivered to the restaurant daily. Passard eventually brought back fish and poultry. This is my second visit and my feeling is that Passard is running out of steam. The food is good but not creative. It lacks the wow factor. I left satisfied but not convinced, with mixed feelings. Paris is expensive and visiting Chef Passard is no different despite the lack of traditional luxury ingredients. Expected better on dessert And they don’t serve Coke!!
