Elkano, an establishment that sets standards of grilling. This is without doubt one of the culinary temples of wood-fired cooking in which there is little requirement to overwork textures or flavours. The temple of Turbot. TheTurbot was wow. Fresh, fatty and perfectly cooked. The best grilled turbot you'll eat anywhere. Roasted whole, skin and all, and served with a simple dressing.
